Construction is wrapping up on Over Easy’s new Buckeye location at the northeast corner of Roosevelt Street and Verrado Way, with signage now installed and interior touches in their final stages.
Workers recently unveiled the restaurant’s signature light-up logo above the entrance, highlighting the brand’s iconic diner-style aesthetic. Inside, early photos taken by InBuckeye showcase bright, modern finishes, a spacious dining area and bar, areas for booth seating, and eye-catching ambient lighting that reflects the vibrant design found at other Arizona locations.
Featured on Food Network, Bon Appétit and “Diners, Drive-Ins and Dives,” Over Easy is known for its waffle dogs, chicken-fried steak, banana-nut French toast, ham steak with red-eye gravy and brunch staples like mimosas.
Part of the chain’s broader growth plan, the Buckeye spot follows the opening of a location in Goodyear earlier this year and will be one of three new restaurants Over Easy plans to open in 2025. The Valley-wide company focuses on breakfast and brunch, with menu staples such as waffle dogs, chilaquiles, omelets and other made-from-scratch dishes.
While no official opening date has been announced for the Buckeye site, company social media teasers have promised “coming soon” updates and urged customers to stay tuned. The restaurant is expected to maintain its standard Over Easy hours, operating daily from approximately 6:30 a.m. to 2 p.m.
The new location aligns with Buckeye’s evolving commercial landscape along the I-10 corridor, offering residents additional dining options and potential job opportunities, according to city officials.
Over Easy plans to bring the total number of locations to 19 by year’s end. The company will hire for dozens of positions, including both back-of-house and front-of-house roles. Interested applicants can learn more at eatatovereasy.com/careers.
