A new First Watch restaurant is taking shape near Verrado Way and Roosevelt Road, steps from the Buckeye Commons retail center, adding another dining option to the city’s rapidly growing corridor.
First Watch is bringing its award-winning breakfast, brunch and lunch concept to Buckeye in autumn 2025, according to previous InBuckeye reporting. The new 3,900-square-foot restaurant on North Verrado Way will include a covered patio, indoor bar and seating for more than 180 guests.
The restaurant will create approximately 30 jobs, with hiring scheduled to begin about a month before opening. Employees will also benefit from First Watch’s “No Night Shifts Ever” policy, which company leaders say allows for a better work-life balance.
The made-to-order menu features fan favorites such as Avocado Toast, Lemon Ricotta Pancakes and Million-Dollar Bacon, all prepared fresh without heat lamps, microwaves or deep fryers. A rotating seasonal menu, updated five times a year, will debut with the Buckeye location in winter 2025. The restaurant will be open daily from 7 a.m. to 2:30 p.m.
The project reflects the ongoing wave of development on Verrado Way, where major retailers and eateries are moving in to meet the needs of the city’s fast-growing population. Buckeye Commons has already attracted several national brands, including Red Wing Shoes, Jimmy John’s, Playa Bowls, Nothing Bundt Cakes and Someburros, which all recently opened nearby.
First Watch, known for its fresh and innovative breakfast and lunch options, has expanded across the Valley in recent years. The Buckeye site will mark the brand’s first location in the city.
